Italian Sausage Stuffed Baked Tomatoes
It's tomato time! My neighbor stopped by with lots of beautiful tomatoes from her garden so I decided to try this recipe! We happen to have some leftover cooked Italian sausage in our freezer. (I keep track of it using our inventory system). The tomatoes are stuffed with sausage, corn, onion, garlic, Boursin cheese (I'm using mozzarella) and Panko breadcrumbs. You can make these ahead of time and place them in the refrigerator for up to 2 days before baking! The recipe author also gives suggestions for other ingredients too! Ground chicken or turkey, quinoa, rice, spinach or kale, zucchini or broccoli. I can't wait to try this!
My recipe adjustments: Sprinkle breadcrumbs & Parmesan on the top!
