Healthy Guacamole Recipe!

This is a fantastic recipe from my "Eat What You Love by Marlene Koch" Cookbook!

Avocados offer heart-healthy monounsaturated fats and antioxidants and a high dose of fiber! This recipe sneeks in some blended cottage cheese to create a luscious creamy guacamole that's lower in fat.  Recipe has avocados, low-fat cottage cheese, lime juice, red onion, tomatos, tabasco and cilantro!  

Comparing Food Prices Using the System

I just came home from the store and I entered the new items I purchased into the system.  Using my system I can see that I bought Parmesan Cheese on 6/2/22 for $3.89.  Today that same item was $4.29.  As an optional field you can enter the price of your items into the system.  It really is amazing how much food prices have risen!

Healthy Rigatoni, White Beans & Sausage Recipe!

I made this yesterday! It's a little bit different from the usual healthy main meals & it includes pasta!

This is a great recipe from my "Eat What You Love by Marlene Koch" Cookbook!

Recipe has turkey kielbasa sausage, reduced-sodium chicken broth, no-salt diced tomatoes & tomatoes from the garden, white beans, garlic, rigatoni, fresh spinach and parmesan cheese!

Italian Sausage Stuffed Baked Tomatoes

It's tomato time!  My neighbor stopped by with lots of beautiful tomatoes from her garden so I decided to try this recipe! We happen to have some leftover cooked Italian sausage in our freezer. (I keep track of it using our inventory system). The tomatoes are stuffed with sausage, corn, onion, garlic, Boursin cheese (I'm using mozzarella) and Panko breadcrumbs. You can make these ahead of time and place them in the refrigerator for up to 2 days before baking! The recipe author also gives suggestions for other ingredients too!

Chicken Kebabs for Labor Day!

Do you combine your chicken and veggies on each skewer or do you separate them onto their own skewers?

I have chicken that I purchased in bulk in our freezer so I've been thinking of making Kebabs for Labor Day! My husband and I have a running disagreement. I want to make the kebabs using both the meat and veggies on each skewer because it looks pretty on the plate. He wants to put each individual veggie and the chicken on separate skewers so that he has better control when grilling.

We use cherry tomatoes, onions, mushrooms and peppers on our skewers.

Blueberries From the Farm

Every year we buy about 30 lbs of blueberries from our local farm and freeze them. They last all winter long. I store them in our basement freezer and keep track of them using our system. Here is a fantastic Lemon Blueberry Muffin recipe I love!

Cucumbers and peppers from our garden. Our 1st time growing them! Very exciting. My husband makes pickles from the cucumbers. Here's a good recipe. He'll grill the peppers and freeze them and place them in our basement freezer to have peppers all winter! I'll keep track of the peppers using our online system.
